Mommy Makes Peach Muffins

I've been planning on trying this new recipe for a while and finally got to it today. I decided to do it PW style. Here's how it turned out for me:

We've got: Butter, Sugar, Egg, Sour Cream, Vanilla, Flour, Baking Powder, Peaches and Pecans.
Add 3/4 cup sugar to 1/2 cup softened butter
Cream them together.Then go check on your sweet baby boy. The coos are just too sweet to ignore. I love a happy baby. Check out that adorable smile.
And then back to the muffins.

Add one egg
and half a cup of sour cream
I like to use my favorite Pampered Chef tool, the measure-all cup. Just pull the plunger down to the correct measurement, put your ingredients in, pop the plunger down to push the ingredients out and scrape off the flat surface left behind. No spatula needed to scrape out measuring cups for me!
Add 1 teaspoon vanilla
and mix well
Clean off coffee maker if you get a little too ambitious with that mixing and end up splattering it everywhere.
Measure out one cup of flour and add to bowl of ingredients
and then measure another half cup
To avoid getting another bowl dirty, but still pre-mix the dry ingredients, put the half cup of flour in the one cup measuring cup you just used. We're doing this to make room for the baking powder.
measure out 1 and 1/2 teaspoons of baking powder.
add that to the 1/2 cup of flour you already put in the one cup measuring cup
stir it up
and dump it in
mix, mix, mix
Pre-heat your oven if you haven't already to 400 F.
By this time baby boy is no longer happy - see his sad face? Aww.
Maybe a pacifier will help.
Low battery on my camera, time to charge it up. Good thing that smart husband of mine got me a spare one!
Baby boy didn't last long with that pacifier. Time to try a new trick. Swing, pacifier combo. Seems to be working! Back to the kitchen. (By the way, I can see him from where I'm working in the kitchen, no worries.)
Pull out the old bag of peaches that you plan to finish up. Find a ball of orange stuff covered in ice and realize they are past the point of no return. Toss them. Pull them back out of the trash for a second to look at the expiration date just for curiosity's sake. Add "clean out the freezer" to your 'to do' list...
Wash hands, and open the new bag of peaches - ahh, much better!

One cup of chopped peaches. A heaping cup if you really like fruit in your muffins like me.
add to bowl (how pretty!)
chop pecans - one cup if you really like pecans, a little less if you don't absolutely love crunchy things in your muffins like me. I used a little over a half cup.
add to bowl
fold 'em all in
grease a dozen muffin cups
scoop batter out and into muffin tins
I didn't show this step, but sprinkle the tops with sugar. The recipe doesn't call for it, but it makes it better - trust me.
Place in oven to bake for 20 - 25 minutes
Don't forget to set a timer. I've been known to leave this crucial step out on occasion - my husband teases me about it quite a bit.
Aww - baby Xavie fell asleep in the swing. Doesn't look too comfy though.
ooh, it's not, check out that red mark on his cheek from leaning against that tray too long...
Here you go buddy, lets add some cushioning and make it a little more cozy. Not too much longer now.

Muffins are out. Let them cool for 10 minutes or so.

Hey there, interesting recipe-story.

I've never seen that kind of measuring cup before, but what a fantastic idea. I can just imagine how easy it would make baking.

And peaches come in bags now? That's a new one for me too.
